Orzo Pasta Salad

Orzo Pasta Salad

Ingredients:

1 package orzo pasta
1/2 red onion, diced fine
1 can chopped olives, drained
1/4 pound black forest ham (deli sliced), chopped fine
1 package frozen petite peas, thawed
2 tablespoons mayonnaise
4 tablespoons red wine vinegar
kosher salt and pepper to taste

Instructions:

  1. In a medium stock pot, bring water and 1 tablespoon of kosher salt to a boil. Add orzo pasta and cook until al dente (according to package directions). Drain pasta, and pour into a large mixing bowl to cool.
  2. Add onion, olives, ham and peas to pasta and stir gently until all ingredients are mixed together.
  3. Add mayonnaise, vinegar, salt and pepper, and mix until incorporated. Adjust seasonings.
  4. Serve as a side with grilled chicken or steak, or dish up a plate for a light lunch.
