Orzo Pasta Salad


Ingredients:
1 package orzo pasta
1/2 red onion, diced fine
1 can chopped olives, drained
1/4 pound black forest ham (deli sliced), chopped fine
1 package frozen petite peas, thawed
2 tablespoons mayonnaise
4 tablespoons red wine vinegar
kosher salt and pepper to taste
Instructions:
- In a medium stock pot, bring water and 1 tablespoon of kosher salt to a boil. Add orzo pasta and cook until al dente (according to package directions). Drain pasta, and pour into a large mixing bowl to cool.
- Add onion, olives, ham and peas to pasta and stir gently until all ingredients are mixed together.
- Add mayonnaise, vinegar, salt and pepper, and mix until incorporated. Adjust seasonings.
- Serve as a side with grilled chicken or steak, or dish up a plate for a light lunch.
